Healthy Lunchbox Recipes
The ideal snack is healthy, rich in vitamins, tasty and should be prepared as quickly as possible. Preparing a snack for the lunchbox can be a bit of a challenge for some.
In a collaboration with the lovely Catrin, we have a few delicious, healthy and easy lunchbox recipe ideas for you.
Sweet lunchbox number 1
Light yoghurt waffles, energy-boosting Bliss Balls that are guaranteed to please mum and lots of colourful fruit. Snacking is allowed here. The yoghurt waffles taste great hot or cold and are therefore the ideal snack for in-between meals. Whether as a late breakfast or a small afternoon snack. Together with lots of vitamins, the day's outing is saved. By the way, the Bliss Balls with dates, nuts and cocoa are ideal for sharing - they are also delicious for the grown-ups.
Energy-boosting lunch box number 2
Fruit, trail mix, cheese cubes, fresh vegetables and, as a highlight, healthy chocolate cake sticks without flour and sugar. The healthy chocolate cake allows snacking with a clear conscience. Bananas, dates and real baking cocoa make the cake especially fudgey and delicately sweet, while foregoing the addition of flour and household sugar. As a little mom hack, we cut the box cake into handy sticks rather than the usual cake slices. Which makes snacking easier for the little ones and looks super cute.
Lunchbox number 3
For the hungry tigers, we have a colourful pasta salad with lots of vegetables and fruity yoghurt dressing today. Super quick to prepare and ideal for cooking in advance - it keeps for 2-3 days in the fridge. It goes well with wholemeal bread and salami sticks - very popular with children. And as a sweet snack, no lunch box should be without a little colourful fruit.
Preparation of pasta salad for children
6 servings | 20 minutes
Ingredients:
250 g noodles
½ cucumber
150 g tomatoes
1 yellow pepper
1 small carrot
100 g peas
Some basil
For the dressing
125 g natural yoghurt
2 tbsp white balsamic vinegar
1 tbsp olive oil
30 ml pineapple juice
Salt & pepper
Prepare the pasta according to the instructions on the packet, strain and leave to cool. Clean the cucumber, tomatoes, pepper and carrot and cut into bite-sized pieces. Blanch the peas briefly. Finely chop the basil. Mix the vegetables and basil with the pasta in a bowl. Mix all the ingredients for the dressing, season with salt and pepper and dress the pasta salad with it. Now it's up to you. You know your children best - what do they like, what do they need and, above all, what snack do they enjoy?
